Strawberries and Earl Grey Cream Cake
This cake tastes just as pretty as it looks. Juicy strawberries paired with the floral hint of earl grey sit on top of a soft vanilla cake and honestly, what’s not to love? Each layer plays its part. The vanilla cake is soft and buttery, the macerated strawberries bring sweetness, and the earl grey whipped cream adds a delicate, fragrant taste that ties it all together.


Gather your ingredients
For the cake:
- Granulated sugar
- Unsalted butter
- Eggs
- Plain yogurt
- Whole milk
- Vanilla extract
- Cake flour
- Baking powder
- Baking soda
- Salt
For the Macerated Strawberries:
- Fresh strawberries
- Granulated sugar
For the Earl Grey Whipped Cream:
- Heavy whipping cream
- Earl grey tea bags
- Powdered sugar

What are Macerated Strawberries?
Macerated strawberries are fresh strawberries tossed with sugar and left to sit for a while. The sugar draws out the natural juices, softening the strawberries and creating a syrupy liquid that intensifies the flavor.


How to make earl grey whipped cream
- Heat the heavy cream over medium heat until just steaming, then add 2 Earl Grey tea bags and brew for 5 minutes on low, keeping the cream just below a simmer.
- Remove from heat and let the tea bags continue to steep for 20 minutes.
- Squeeze the tea bags to extract maximum flavor, then remove them and transfer the cream to a bowl.
- Chill in the fridge while you make the cake. Once chilled, add the powdered sugar and whip until stiff peaks form.
Tip: This is the first thing you’ll want to make since the cream needs time to chill in the fridge before whipping. If it is not cold enough it will not whip properly.

How to make Vanilla cake
01. Prepare the batter
Cream together the butter and sugar until well combined, then add the eggs one at a time. Mix in the yogurt, milk, and vanilla extract, followed by the dry ingredients until just combined.

02. Bake
Spread into a greased 9-inch pan and bake at 350°F for 25-30 minutes until a toothpick comes out with a few moist crumbs.

03. Assemble
Spread the earl grey whipped cream over the cake and pile on the macerated strawberries along with any juices. Make sure the cake is completely cool before topping with the whipped cream, otherwise it will melt.

For the Earl Grey Whipped Cream
- 1 cup heavy whipping cream
- 2 Earl Grey tea bags
- 2 tbsp powdered sugar*
For the Vanilla Cake
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter softened
- 3 eggs room temp.
- 1/4 cup plain yogurt
- 1/4 cup whole milk
- 1 tbsp vanilla extract
- 1 3/4 cups cake flour*
- 1 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
For the Macerated Strawberries
- 1 1/2 cups fresh strawberries stems removed and quartered
- 2 tbsp granulated sugar
Instructions
- Pour the heavy cream into a small saucepan and heat over medium heat until just steaming. Do not let it boil.
- Add the tea bags to the hot cream. Brew for 5 minutes on low, keeping the cream just below a simmer.
- Remove from heat and let the tea bags continue to steep for 20 minutes. Squeeze each tea bags firmly against the side of the pan to extract maximum flavor, then remove them and transfer the cream to a bowl. Chill it in the fridge while you make the cake.
- Preheat the oven to 350°F. Grease and line the bottom of a 9-inch cake pan with parchment paper.
- Using a handheld electric mixer or in a stand mixer fitted with paddle attachment, cream together the butter and sugar until well combined, 2 minutes. Add the eggs one at a time, mixing well after each addition.
- Mix in the yogurt, milk, and vanilla extract. Then, add the flour, baking powder, baking soda, and salt. Mix just until combined.
- Spread the batter into the prepared pan and bake at 350℉ for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
- Meanwhile, make the macerated strawberries. Mix together the strawberries and sugar and let sit for 20 minutes until the juices have released.
- Once the cake is done baking, remove from the pan and allow to cool completely. Add the powdered sugar to the chilled cream and whip until stiff peaks form. Top the cake with the earl grey whipped cream and strawberries.
