Orzo Stuffed Peppers

What is orzo?
Orzo is a form of short-cut pasta that resembles large grains of rice. When cooked, orzo has a tender texture and absorbs flavors well, making it perfect for this recipe. Orzo is typically cooked in boiling salted water, just like other pasta. It usually cooks in about 8-10 minutes.

Orzo Stuffed Peppers
These orzo stuffed peppers are so bright & refreshing, packed with sun-dried tomatoes, olives, feta, pine nuts, & herbs. They're so flavorful and easy to make!
Ingredients
- 2 cups orzo
- 2 large bell peppers, halved
- 2 garlic cloves, thinly sliced
- 2 tbsp extra virgin olive oil
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup kalamata olives, chopped
- 1/4 cup pine nuts
- 1/4 cup feta cheese
- 2 tsp fresh mint, chopped
- 2 tsp fresh basil, chopped
- 2 tbsp balsamic vinegar
- 1/4 cup parmesan cheese, grated
- 1/2 tsp chili flakes
- salt and pepper
Instructions
- Preheat oven to 400℉. In an 8×8 baking dish, add the halved bell peppers cut side up. Evenly drizzle with olive oil and spread the garlic slices on top. Season with salt and pepper.
- Roast the peppers for 20-25 minutes.
- Meanwhile, bring a large pot of water to a boil. Cook the orzo pasta according to package instructions. About 8-10 minutes.
- Drain the orzo and let cool for 10 minutes.
- Add the sun-dried tomatoes, olives, pine nuts, feta cheese, mint, basil, and chili flakes. Mix until everything is combined.
- Drizzle the orzo salad with balsamic vinegar. Salt and pepper to taste.
- Once the bell peppers have roasted, remove them from the oven. Spoon about 1/2 cup of the orzo salad into each bell pepper until filled. Garnish with parmesan cheese and chili flakes.
- Bake the stuffed peppers for 15 minutes or until the parmesan cheese has melted. Remove from the oven and serve warm. Enjoy!
