Lemon Lavender Sugar Cookies

These cookies combine the bright and zesty notes of lemon and floral hints of lavender in a soft sugar cookie. They’re rolled in a vanilla lavender sugar and drizzled with bright lemon icing. They’re the perfect cookies to make for a light summery dessert and pair perfectly with a cup of warm tea!

01. Lemon

The lemon zest and fresh lemon juice adds the perfect tartness to these cookies. It pairs so well with the floral notes of the lavender.

02. Lavender

We used Dried Lavender from The Spice House for this recipe. We grind the lavender to a fine consistency using a spice grinder. It’s best to grind the lavender when ready to use so that it stays aromatic and fresh!

03. Sugar

They’re not sugar cookies without being rolled in sugar! We used a pre-made Lavender Vanilla Sugar, but you can make your own by combining granulated sugar, lemon zest, and dried ground lavender.

Recipe Tips

Cream butter and sugar: Cream the butter and sugar together thoroughly until the mixture is light and fluffy. This step incorporates air into the dough, which helps the cookies rise and gives them a soft texture.

Don’t over mix: Once you add the dry ingredients, mix the dough until all of the ingredients are just combined to ensure that you get soft and fluffy cookies.

Use room-temperature ingredients: Make sure your butter and eggs are at room temperature. This allows the batter to blend together more easily, resulting in a smoother dough.

Cooling: Allow the cookies to cool completely before drizzling the icing. If the cookies are too warm, the icing will slide off the cookies.

Ingredients
 
 

Lavender Sugar

  • 1/2 cup granulated sugar
  • 1 tsp dried lavender ground
  • zest of 1/2 lemon

Cookie Batter

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter room temperature
  • 1 whole egg room temperature
  • 1 egg yolk room temperature
  • zest of 1 lemon
  • 1 tbsp fresh lemon juice
  • 1 tbsp dried lavender finely ground
  • 2 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Lemon Icing

  • cups powdered sugar sifted
  • 2 tbsp heavy cream
  • juice from half a lemon

Instructions
 

  • To make lavender sugar, combine the sugar, ground lavender, and lemon zest. Set aside.
  • In a large bowl, cream the butter and sugar. Then beat in the egg and egg yolk until light and fluffy.
  • Add in the lemon zest, lemon juice, lavender, and vanilla extract. Mix well.
  • Add in the flour, baking soda, baking powder, and salt. Fold until combined.
  • Scoop the cookie dough into 1½ tbsp balls. Roll each ball in the lavender sugar.
  • Bake at 350°F for 10-12 minutes.
  • For the icing, whisk together the icing ingredients and spread over the cooled cookies. Enjoy!
