Ingredients
 
 

  • 1/2 cup unsalted butter melted
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp espresso powder optional
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup semi sweet chocolate chopped

Instructions
 

  • Preheat the oven to 350℉. Line a baking tray with parchment paper.
  • In a bowl, whisk together the butter, brown sugar, and granulated sugar. Add the egg and vanilla. Whisk until combined.
  • Add the flour, cocoa powder, baking soda, espresso powder (if using), and salt. Fold until combined. Be careful not to overmix. Mix in the chocolate.
  • Scoop the dough in to 1 1/2 tbsp balls. Bake for 10 minutes. Remove the tray from the oven and tap it on the counter a few times to slightly flatten the cookies. Place the cookies back in the oven and bake for another 2 minutes.
