Coffee Cake With Cinnamon Streusel
The combo of coffee cake and a hot cup of coffee is the warm hug you never knew you needed. Soft, buttery coffee cake layered with a brown sugar cinnamon ribbon, crunchy cinnamon streusel, and a vanilla drizzle.
Ingredients
Cinnamon streusel
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 4 tbsp unsalted butter softened
- 2 tsp cinnamon
Coffee cake
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 eggs room temp.
- 3/4 cup buttermilk*
- 2 tsp vanilla
Filling
- 1/3 cup brown sugar
- 1 1/2 tsp cinnamon
Icing
- 1/2 cup powdered sugar
- 3-4 tbsp heavy cream or milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350℉. Grease and line a 9×9 pan.
- Combine the ingredients for the cinnamon streusel until pea sized balls form. Refrigerate until ready to use.
- In a small bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- Using a hand mixer, cream together the butter, granulated sugar, brown sugar, until light and fluffy, about 2 minutes.
- Add the eggs one at a time, whisking between each addition. Add half of the dry ingredients, followed by the buttermilk. Add the rest of the dry and mix until combined.
- Mix together 1/3 cup brown sugar and 1 1/2 tsp cinnamon for the filling. Spread half of the batter into the pan and sprinkle with the cinnamon sugar.
- Spread the remaining batter and top with the cinnamon streusel. Bake for 30-35 minutes.
- Make the icing by whisking together the powdered sugar, heavy cream/milk, and vanilla. If the icing is too thin, add another 1 tsp of heavy cream/milk. Allow the cake to cool to room temp., then drizzle with icing.
Notes
If you don’t have buttermilk on hand, mix together 3/4 cup of whole milk with 1 tbsp lemon juice or vinegar. Let sit for 5 minutes.
