Chocolate Chip Muffins

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 3/4 cup buttermilk or plain greek yogurt*
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
  • 1 chocolate bar cut into 12 pieces

Instructions
 

  • Preheat the oven to 375℉. Line a tray with muffin liners.
  • Using an electric hand mixer or whisk, cream together the butter and sugar. Add the eggs and mix until combined.
  • Mix in the buttermilk/yogurt and vanilla. Then, fold in the flour, baking powder, and salt.
  • Toss the chocolate chips with 1 tbsp of flour and gently mix until all of the chocolate is coated. Fold the chocolate chips into the batter.
  • Spoon 1.5 tbsp of batter into the muffin tins. Top each with a piece of chocolate and add another 1.5 tbsp of batter on top.
  • Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

If you don’t have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or white vinegar for every 1 cup of milk.
