Caramel Chocolate Mousse With Cookie Crumble
If there’s one dessert we can’t stop talking about lately, it’s this one. Salted caramel bottom, silky chocolate mousse, and a buttery cookie crumble on top. Simple, but honestly kind of perfect.


We first had something like it at a bakery recently, and one bite in we knew we had to recreate it at home. So we did, with a few upgrades of our own. We couldn’t help but give the caramel layer a full upgrade, homemade salted caramel.. liquid gold, truly. The chocolate mousse is light and airy, with just the right amount of richness. And the topping is where we had the most fun. Instead of simply crushing store bought cookies, we turned our oatmeal chocolate chip cookie recipe into a crisp, buttery crumble, basically a deconstructed cookie… yummm! It adds this little crunch that ties everything together, finished with soft dollops of whipped cream.
