Brownie Crinkle Cookies

Brownie crinkle cookies aka the best of both worlds. Not kidding when we say the tray was gone in 10 minutes! These cookies are thin, chewy, and have a rich, fudgy center.

Ingredients You’ll Need

  • Unsalted Butter
  • Semi Sweet Chocolate – it’s important to use a good quality chocolate! We recommend using Ghirardelli.
  • Brown Sugar
  • Granulated Sugar
  • Eggs
  • Vanilla Extract
  • Cornstarch
  • Cocoa Powder
  • Baking Powder
  • Salt

Ingredients
 
 

  • 1/2 cup unsalted butter
  • 1 cup semi sweet chocolate
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup cornstarch
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions
 

  • Preheat the oven to 350℉. Line a baking tray with parchment paper.
  • In a small bowl, add the butter and chocolate. Melt in the microwave for 30 seconds to 1 minute until smooth. Set aside.
  • Using an electric hand mixer, beat the sugars, eggs, and vanilla until the mixture is thickened and pale in color, about 5 minutes. (This can also be done by hand with a whisk)
  • Add in the warm chocolate and whisk until combined. Then, add the cornstarch, cocoa powder, baking powder, and salt. Fold using a spatula until combined.
  • Cover the bowl with plastic wrap and refrigerate for 10 minutes. This step is important— chilling the batter for exactly 10 minutes is key; any more or less time can impact the texture.
  • Scoop the batter into 2 tbsp sized balls and place them on the baking tray. Bake for 10 minutes.

    These cookies are so perfect, I’ve made them twice in one week! Thin, crispy on the edges but chewy in the middle. Not too sweet. Perfect for a cookie exchange party. Saving this recipe and sharing with everyone I know!!
