Gather your ingredients

For the cake:
  • Granulated sugar
  • Unsalted butter
  • Eggs
  • Plain yogurt
  • Whole milk
  • Vanilla extract
  • Cake flour
  • Baking powder
  • Baking soda
  • Salt
For the Macerated Strawberries:
  • Fresh strawberries
  • Granulated sugar
For the Earl Grey Whipped Cream:
  • Heavy whipping cream
  • Earl grey tea bags
  • Powdered sugar

What are Macerated Strawberries?

Macerated strawberries are fresh strawberries tossed with sugar and left to sit for a while. The sugar draws out the natural juices, softening the strawberries and creating a syrupy liquid that intensifies the flavor.

How to make earl grey whipped cream

  1. Heat the heavy cream over medium heat until just steaming, then add 2 Earl Grey tea bags and brew for 5 minutes on low, keeping the cream just below a simmer.
  2. Remove from heat and let the tea bags continue to steep for 20 minutes.
  3. Squeeze the tea bags to extract maximum flavor, then remove them and transfer the cream to a bowl.
  4. Chill in the fridge while you make the cake. Once chilled, add the powdered sugar and whip until stiff peaks form.

Tip: This is the first thing you’ll want to make since the cream needs time to chill in the fridge before whipping. If it is not cold enough it will not whip properly.

How to make Vanilla cake

01. Prepare the batter

Cream together the butter and sugar until well combined, then add the eggs one at a time. Mix in the yogurt, milk, and vanilla extract, followed by the dry ingredients until just combined.

02. Bake

Spread into a greased 9-inch pan and bake at 350°F for 25-30 minutes until a toothpick comes out with a few moist crumbs.

03. Assemble

Spread the earl grey whipped cream over the cake and pile on the macerated strawberries along with any juices. Make sure the cake is completely cool before topping with the whipped cream, otherwise it will melt.

Notes

*Powdered sugar is used here as it dissolves easily into the cream and helps it hold its shape. You can substitute with granulated sugar.
*To make your own cake flour, replace the 1 3/4 cups cake flour with 1 1/2 cups all purpose flour and 3 1/2 tbsp cornstarch. Sift together before using.
How to Store: This cake is best eaten on the day it is assembled. Because of the fresh strawberries and whipped cream, keep refrigerated for up to 3 days.
