Ingredients
  

  • 1 cup pound cake cut into small cubes

Spiced Apples

  • 2 medium apples peeled and cubed
  • 1/3 cup brown sugar
  • 4 tbsp unsalted butter
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp water
  • 1/2 tsp cornstarch

Cinnamon Streusel

  • 2 tbsp all purpose flour
  • 1 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 1/4 tsp cinnamon

Whipped cream

  • 1/4 cup heavy cream
  • 1 tsp granulated sugar
  • 1/2 tsp vanilla extract or vanilla bean paste

Instructions
 

  • For the spiced apples: In a saucepan over medium heat, add the apples, brown sugar, butter, lemon juice, and cinnamon. Cook for 7-10 minutes until the apples are soft and tender. In a small bowl, mix together the cornstarch and water. Add the mixture to the apples and simmer until thickened, about 1 minute. Set the apples aside to cool.
  • For the streusel: In a saucepan over medium low heat, add the streusel ingredients and stir to combine. Cook for 3-5 minutes until the streusel is golden and smells nutty. Remove from the heat and let it cool. It will crisp up as it sits.
  • For the whipped cream: Whisk the heavy cream, sugar, and vanilla until stiff peaks.
  • To assemble: In 2 small serving glasses, layer the pound cake, apples, and whipped cream. Top with the streusel and enjoy!
