We’ve been wanting to make olive oil chocolate chip cookies for a while now, and finally took it as a sign to go for it. So glad we did. If you’re into soft cookies with golden, crispy edges, you’ll love these. The taste of olive really comes through and pairs so well with dark chocolate. They’re super simple to make too: just one bowl, basic ingredients, and no mixer needed.

Olive Oil Chocolate Chip Cookies

Ingredients
 
 

  • 1/2 cup olive oil
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • cups all purpose flour
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped semi sweet chocolate

Instructions
 

  • Preheat the oven to 350℉. Line a baking tray with parchment paper.
  • Whisk together the olive oil, brown sugar, and granulated sugar until combined. Add the egg, egg yolk, and vanilla. Whisk until smooth.
  • Add in the flour, cornstarch, baking soda, and salt. Mix just until combined. Then, fold in the chocolate. Chill the dough for at least 30 minutes.
  • Scoop cookie dough into 1½ tbsp balls. Bake at 350℉ for 10 minutes.
  • Remove from the oven and tap the baking sheet on a countertop a few times to slightly flatten the cookies.
