Brown Butter Drumstick Blondies

These blondies have everything you love about a classic Drumstick cone. Soft brown butter blondies packed with chocolate chunks, salted toffee bits, and waffle cone pieces. They’re gooey, chewy, and absolutely delicious!

Ingredients you’ll need

  • Butter: This recipe calls for brown butter, which is butter that has been cooked until the milk solids turn golden brown and develop a nutty, toasty flavor. It’s a simple ingredient but takes these bars to the next level. Click here for some tips and tricks to perfecting your brown butter!
  • Brown and granulated sugar: We like to use a combination of light brown sugar and granulated sugar which gives a beautiful golden brown color and makes the blondies soft and moist.
  • Egg and egg yolk: The eggs are essential for binding the ingredients together and the yolk helps with the texture and softness of the blondie.
  • Flour: Nothing fancy here, just some all-purpose flour.
  • Waffle cones: They add that signature crispy, slightly sweet flavor similar to the cone part of a Drumstick ice cream.
  • Toffee: Toffee bits are small, crunchy pieces of caramelized sugar mixed with butter.
  • Chopped chocolate: Using chopped chocolate creates pools of melty chocolate giving that gooeyness that we all love!

How to Make Salted Toffee

01. Prepare the baking sheet

Make sure to line your baking sheet with parchment paper before you start! You’ll want the tray ready to go so you can pour the toffee when it’s done.

02. Melt the butter and sugar

In a medium saucepan, combine the butter, sugar, and salt over medium heat. Stir occasionally until the butter is completely melted and the sugar is dissolved.

03. Cook the toffee

Once the sugar and butter are melted, continue cooking the mixture, stirring every 10 seconds. The mixture will gradually turn golden brown. As you stir, the toffee will slowly turn a medium-dark golden brown color. Continue stirring and cooking for about 10 minutes (it may take less time depending on the heat of your stove). Once you see the desired color, remove from the heat immediately to keep it from burning.

04. Sprinkle with flaky salt

Pour the toffee onto the prepared baking sheet pan and spread into an even layer. Generously sprinkle flaky salt on top.

05. Cool and break into bits

Allow the toffee to cool completely. Then, break it into pieces.

Salted Toffee

  • 1/2 cup unsalted butter cubed
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • flaky salt for topping

Blondies

  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 whole egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup chopped chocolate plus more for topping
  • 1/2 cup salted toffee bits plus more for topping
  • 1/3 cup crushed waffle cones plus more for topping

Instructions
 

For the Toffee

  • Line a baking sheet with parchment paper. In a medium saucepan, combine the butter, sugar, and salt over medium heat. Stir occasionally until the butter is completely melted and the sugar is dissolved.
  • Once the sugar and butter are melted, continue cooking the mixture, stirring every 10 seconds. The mixture will gradually turn golden brown.

For the Blondies

  • Preheat the oven to 350℉. Line a 9×9 pan with parchment paper.
  • In a saucepan over medium heat, add the unsalted butter and melt, constantly swirling the pan. Once melted, the butter will begin to foam and get bubbly. Watch the butter closely, being careful not burn. After the butter turns golden brown, remove from heat and transfer to a bowl. Allow the butter to cool, about 10 minutes. 
  • Whisk the butter, sugars, egg, egg yolk, and vanilla extract until smooth. Mix in the flour and salt.
  • Fold in the chopped chocolate, toffee bits, and waffle cone pieces.
  • Spread the batter into the prepared pan. Top with more chocolate, toffee, and waffle cone pieces. Bake 25-30 minutes. Allow to cool before slicing. Enjoy!

Notes

How to Store: Store blondies in an airtight container at room temperature up to one week. To freeze, wrap the sliced blondies in plastic wrap, then transfer to an airtight container or freezer bag. Freeze for up to three months.
