This sticky toffee apple skillet cake is the ultimate fall dessert! Tender, spiced apples are folded into a moist apple spice cake batter, then topped with a sweet, buttery toffee sauce.

Ingredients
 
 

Cake

  • 1 cup apple cider or unsweetened apple juice
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp apple pie spice
  • 1/2 tsp salt

Apples

  • 2 medium apples peeled and cubed
  • 2 tbsp brown sugar
  • 1 tbsp unsalted butter
  • 1 tsp cinnamon
  • 1/2 tsp apple pie spice

Toffee Sauce

  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

Instructions
 

Prepare the Apples

  • In a saucepan over medium low heat, add the apples, butter, brown sugar, cinnamon, and apple pie spice. Cook for about 7-10 minutes, stirring frequently, until the apples are tender. Remove from the heat and allow to cool.

For the Cake

  • Preheat the oven to 350℉. Grease a 9 inch skillet.
  • In a saucepan over medium heat, bring the apple cider/apple juice to a simmer and reduce until 1/2 cup remains, about 10 minutes. Remove from the heat and allow to cool.
  • In a large bowl, whisk the sugar and butter until light and fluffy. Add the eggs one at a time, followed by the vanilla.
  • In a separate bowl, whisk together the flour, baking powder, and spices. Add half the dry ingredients to the batter and mix. Then, add the apple juice reduction, followed by the rest of the dry ingredients.
  • Fold in the spiced apples. Transfer the batter to a greased skillet and bake at 350°F for 30 min.

For the Toffee Sauce

  • In a saucepan over medium heat, add the brown sugar and butter. Let it come to a boil, then whisk in the heavy cream and vanilla. Simmer for about 1-2 minutes, then set aside to cool slightly.
  • While the cake is still warm, poke holes throughout and soak with the toffee sauce. Serve with ice cream and enjoy!
