Coffee Cake With Cinnamon Streusel

Ingredients
  

Cinnamon streusel

  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 4 tbsp unsalted butter softened
  • 2 tsp cinnamon

Coffee cake

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs room temp.
  • 3/4 cup buttermilk*
  • 2 tsp vanilla

Filling

  • 1/3 cup brown sugar
  • 1 1/2 tsp cinnamon

Icing

  • 1/2 cup powdered sugar
  • 3-4 tbsp heavy cream or milk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350℉. Grease and line a 9×9 pan.
  • Combine the ingredients for the cinnamon streusel until pea sized balls form. Refrigerate until ready to use.
  • In a small bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • Using a hand mixer, cream together the butter, granulated sugar, brown sugar, until light and fluffy, about 2 minutes.
  • Add the eggs one at a time, whisking between each addition. Add half of the dry ingredients, followed by the buttermilk. Add the rest of the dry and mix until combined.
  • Mix together 1/3 cup brown sugar and 1 1/2 tsp cinnamon for the filling. Spread half of the batter into the pan and sprinkle with the cinnamon sugar.
  • Spread the remaining batter and top with the cinnamon streusel. Bake for 30-35 minutes.
  • Make the icing by whisking together the powdered sugar, heavy cream/milk, and vanilla. If the icing is too thin, add another 1 tsp of heavy cream/milk. Allow the cake to cool to room temp., then drizzle with icing.

Notes

If you don’t have buttermilk on hand, mix together 3/4 cup of whole milk with 1 tbsp lemon juice or vinegar. Let sit for 5 minutes.
