Tiramisu Chocolate Cake

This tiramisu chocolate cake is made up of 3 heavenly layers: a coffee-soaked chocolate sponge cake, a light and airy mascarpone frosting, and a generous dusting of cocoa powder. This cake is inspired by a dessert we recently had at a coffee shop. It’s one of our favorites because it’s perfectly sweet and simple to make!

Ingredients
 
 

Chocolate Cake:

  • 3 eggs room temp
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract

Coffee Soak

  • 1/2 cup hot water
  • 2 tbsp granulated sugar
  • 2 tbsp instant coffee

Mascarpone Frosting

  • 1 cup heavy cream
  • 2 tbsp granulated sugar
  • 8 oz mascarpone
  • 4 oz cream cheese softened
  • 1/3 cup powdered sugar sifted
  • 1 tsp vanilla extract or vanilla bean paste

Instructions
 

To make the chocolate cake:

  • Preheat the oven to 350 degrees F. Line a 9×13 baking pan with parchment paper.
  • Using a hand mixer, whip the eggs until foamy. About 1 minute. Then, add the sugar and beat until thickened and pale in color. About 15 minutes.
  • Add in the flour, cocoa powder, espresso powder, and salt. Fold in the dry ingredients into the wet batter until no flour streaks remain.
  • Fold the in the oil and vanilla extract until combined.
  • Pour into a lined pan and bake for 20-25 minutes.
  • Mix together the instant coffee, sugar, and hot water. Using a fork, poke holes in the cake and soak it while the cake is still warm.

To make the frosting:

  • Make the frosting by whipping the heavy cream and sugar until stiff peaks. In a separate bowl, whisk together the mascarpone, cream cheese, powdered sugar, and vanilla. Fold in the heavy cream until combined.

To assemble:

  • Once the cake has completely cooled, spread the frosting on top and dust with cocoa powder. Slice and enjoy!
