Dough
- 3 cups all purpose flour plus more if needed
- 1/4 cup granulated sugar
- 2 1/4 tsp instant yeast
- 3/4 tsp salt
- 1 cup warm milk
- 5 tbsp unsalted butter melted
- 1 whole egg
- 1 egg yolk
- 2 tsp vanilla extract
Brown Butter Cinnamon Sugar
- 6 tbsp unsalted butter
- 1/2 cup granulated sugar
- 1 tbsp ground cinnamon
Cream Cheese Glaze
- 2 oz cream cheese softened
- 1 tbsp unsalted butter softened
- 6 tbsp powdered sugar
- 2 tbsp milk
Instructions
- In the bowl of a stand mixer fitted with the dough hook, add the flour, sugar, instant yeast, and salt. (Alternatively, whisk the ingredients together in a large mixing bowl if making the dough by hand).
- In a separate bowl, whisk together warm milk, melted butter, egg, egg yolk, and vanilla. Add to the dry ingredients and mix on low speed until a rough dough forms. (If mixing by hand, stir with a wooden spoon or spatula until a shaggy dough forms)
- Increase the speed to medium and knead for 10–12 minutes. (If kneading by hand, knead on a lightly floured surface for 12–15 minutes). The dough will be soft and sticky at first but will become smooth and elastic as it kneads. If it's still very wet and not coming together after kneading, add flour 1 tablespoon at a time until it forms a soft, workable dough.
- Transfer the dough to a lightly greased bowl, cover, and let the dough rise for 1-1 1/2 hours until doubled in size.
- While the dough rises, make the brown butter. In a small saucepan over medium heat, melt the butter, constantly swirling the pan. Once melted, the butter will begin to foam and get bubbly. Watch closely, being careful not burn. After the butter turns golden brown, remove from the heat and let cool.
- Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a log, then cut each log into 12–13 equal pieces. Roll each piece into a smooth ball, making about 50 dough balls total.
- Place all of the dough balls into a large bowl. Pour the cooled browned butter over them and gently toss until evenly coated. Working one at a time, roll each dough ball in the cinnamon sugar until fully coated.
- Grease a 12-inch round baking dish. If you don't have one, you can also use a 10-inch cast iron skillet, a 9×13-inch baking dish, or two 9-inch round cake pans.
- Arrange the coated dough balls evenly in the prepared baking dish, leaving a little space between each one so they have room to rise. Cover loosely with plastic wrap or a clean kitchen towel and let rise for 30–45 minutes, or until puffy and touching. Meanwhile, preheat the oven to 350°F.
- Bake for 25-30 minutes, or until the tops are golden brown and the center is cooked through. If the tops begin browning too quickly, loosely tent with foil during the last few minutes of baking.
For the cream cheese glaze
- Using an electric hand mixer, beat the cream cheese and butter until smooth. Add the powdered sugar and mix until smooth. Then, mix in the milk until you reach a pourable glaze consistency.
