Brownie Bites

Ingredients
 
 

  • 1/2 cup unsalted butter
  • 1/2 cup semi-sweet chocolate
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup all purpose flour
  • 6 tbsp cocoa powder
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips

Instructions
 

  • Preheat the oven to 350°F. Grease a mini muffin tin.
  • In the microwave or in a small saucepan, melt the butter and chocolate until smooth. Set aside. 
  • In a large bowl, use an electric hand mixer to beat the sugar, eggs, and vanilla until thickened and pale in color, about 5 minutes. You can also use a whisk but it may take longer.
  • Add the warm chocolate and mix until combined.
  • Add the flour, cocoa powder, and salt. Mix until combined and no flour streaks remain. Then, fold in the mini chocolate chips.
  • Use a 1 1/2 tablespoon cookie scoop to portion the batter evenly into the mini muffin pan.
  • Bake for 10 minutes, until the tops look set and just barely start to pull away from the edges. A toothpick inserted in the center should come out with a few moist crumbs (not wet batter, and not completely clean).
